This noodle, called <strong>&#8220;<a href=\"https:\/\/www.mybasket.co.jp\/news\/detail\/20250131000002.html\">Karahigu-men<\/a>,&#8221;<\/strong> was named after its co-developers: Italian chef <a href=\"https:\/\/www.instagram.com\/takahiroohiguchi\/\">Takahiro Higuchi<\/a> and former freelance professional wrestler <a href=\"https:\/\/www.instagram.com\/w960phoenix\/\">Karasu (crow) &#8220;The Phoenix<\/a>.&#8221;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">While sauce-based yakisoba is believed to have originated in Asakusa as a type of <em>Y\u014dshoku<\/em> (Japanese-style Western cuisine), it has evolved into a beloved Japanese comfort food (especially served at barbecues or festival stalls). It typically features Chinese-style wheat noodles stir-fried with bite-sized pork, cabbage, carrots, and bean sprouts. The defining ingredient is the special yakisoba sauce\u2014similar to Worcestershire sauce, but thicker, sweeter, and packed with umami. Before serving, it is often topped with <em>aonori<\/em> (dried green seaweed powder) and <em>beni-shoga<\/em> (red pickled ginger) for an extra burst of flavor and color.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At this shop, the noodles are cooked well-done until <strong>crazy-crispy<\/strong>, so they might feel a bit tough to chew at first. However, once you get used to it, that one-of-a-kind texture is unforgettable, and you\u2019ll definitely be hooked.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The owner, Haruki Kijima\u2014originally from Yoron Island\u2014boasts a unique background as a former comedian, and his quick wit never fails to keep customers entertained.
